Eggplant Lasagna





I made this last night as I am starting a no sugar no white flour diet! Ahhh! That dreaded word! I am not a huge fan of vegetables, however, this dinner is not only easy to make, but good! It has only 4 ingredients-gotta love that!

RICOTTA CHEESE

MOZZARELLA CHEESE

TOMATO SAUCE

CUT EGGPLANT INTO SEVERAL LONG, THIN SLICES. LAY A FEW AT BOTTOM OF (SPRAYED) 9X13 PAN. SPREAD SOME SAUCE AND RICOTTA ON TOP. REPEAT LAYERS. BAKE AT 400 DEGRESS FOR 20-30 MINUTES. TOP WITH MOZZARELLA AND BAKE UNTIL CHEESE IS MELTED.

VOILA! DINNER IS SERVED!
