I love baking after school snacks for the kids.
On Friday's I like to do extra "sweet" ones.
I found this recipe for S’more cupcakes and thought I would give them a try.
OMG!
They are to die for!
I may just have them polished off before the kids get home from school!
Good thing I went on a run today,

Would You Like S’more?
Ingredients
1 3/4 cups cups all-purpose flour, spooned and leveled
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
3/4 cup plain low-fat yogurt
1/2 cup (1 stick) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
Directions
Heat oven to 375° F. Line a standard 12-cup muffin tin with paper liners. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a large bowl, whisk together the yogurt, butter, eggs, and vanilla. Add the flour mixture and mix until incorporated.
Divide the batter evenly among the muffin cups. Bake until golden brown and a toothpick inserted in the center of a cupcake comes out clean, 18 to 20 minutes. Transfer the cupcakes to a wire rack and let cool before frosting.
Now, for the frosting.....
Ingredients
1 8-ounce bar cream cheese, at room temperature
1/2 cup (1 stick) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
3 1/2 cups confectioners’ sugar
Directions
Using an electric mixer, beat the cream cheese, butter, and vanilla until smooth.
Add the sugar and beat until fluffy. If necessary, slightly chill the frosting to stiffen it before using.
And to decorate.....
Frost the cupcakes and, dividing evenly, sprinkle with 2 crumbled graham crackers, ¾ cup miniature marshmallows, and ¼ cup miniature chocolate chips.
