~up to my eyeballs in zucchini~

seriously.

We started baking at 9 am and as of now, 4:30,

we are still baking,

and I have only gone through 2 of the 3 zucchini's!

So far we have made 2 pans of zucchini quiche.....

a dozen zucchini muffins...........

2 large pans of zucchini brownies with frosting.........

and 4 loaves of bread.

And, we only had to go to the grocery store once

in the middle of all this for more flour and cinnamon!
The brownies are soooo good, and guess what?

My non veggie eaters love them!

We, or shall I say I, also shredded
12 cups of zucchini, and vacuum packed it for future use.

I also individually wrapped the brownies and slices of bread, vacuum packed them, and am freezing them for later.

I will be so glad I did it when school starts!

It will make making lunches a breeze!
